  • 1 cup (240g) creamy peanut butter
  • 1/4 cup (60g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 1 1/2 cups (180g) crushed graham crackers or crushed pretzels
  • 1 1/2 cups (270g) semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil or shortening (optional, for smoother coating)

Instructions


  • Make the Peanut Butter Filling:

    • In a large mixing bowl, beat together the peanut butter, softened butter, and powdered sugar until smooth.
    • Stir in the crushed graham crackers or pretzels until fully combined. The mixture should be thick enough to roll into balls. If it’s too soft, add more crushed graham crackers or chill briefly.
  • Form the Balls:

    • Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes, or until firm.
  • Melt the Chocolate:

    • In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second increments, stirring between each, until smooth.
  • Dip the Peanut Butter Balls:

    • Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, letting any excess drip off.
    • Place the dipped balls back onto the parchment paper.
  • Set and Serve:

    • Refrigerate the peanut butter balls for 15-20 minutes, or until the chocolate is fully set.
    • Store in an airtight container in the fridge.
