  • 1/2 cup natural peanut butter (creamy or crunchy)
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • 2 tablespoons chia seeds or flaxseeds (optional)

Topping (Optional):

  • Melted chocolate for drizzling
  • Crushed peanuts for garnish

Instructions

  1. Prepare the Wet Ingredients:
    • In a microwave-safe bowl, combine peanut butter, honey (or maple syrup), and coconut oil.
    • Microwave for 30–45 seconds until melted. Stir to combine.
  2. Mix the Dry Ingredients:
    • In a large bowl, add the rolled oats, chia seeds (if using), and mini chocolate chips.
  3. Combine and Mix:
    • Pour the wet mixture over the dry ingredients. Add vanilla extract. Stir until all the oats are evenly coated.
  4. Shape into Cups:
    • Line a muffin tin with paper liners. Spoon the mixture into each liner, pressing down firmly with the back of a spoon or your fingers to compact the mixture.
  5. Set and Chill:
    • Place the muffin tin in the refrigerator and chill for at least 1 hour, or until the granola cups are firm.
  6. Add Toppings (Optional):
    • Drizzle with melted chocolate and sprinkle with crushed peanuts if desired.
  7. Serve and Store:
    • Remove from the liners and enjoy! Store in an airtight container in the refrigerator for up to 1 week.

  • For a nut-free version, substitute peanut butter with sunflower seed butter.
