These no-bake cookies are rich, buttery, and full of pecan and coconut flavors. With their praline-like texture, they are an easy-to-make dessert that’s ready in minutes!

  • 1/2 cup (115 g) unsalted butter
  • 1/2 cup (100 g) brown sugar, packed
  • 1/4 cup (60 ml) heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 1/2 cups (150 g) sweetened shredded coconut
  • 1 cup (100 g) chopped pecans

Instructions

  • Prepare the mixture:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the brown sugar, heavy cream, vanilla extract, and salt. Stir until combined.
    • Bring the mixture to a gentle boil and let it simmer for 2-3 minutes while stirring constantly.
  • Combine with coconut and pecans:
    • Remove the saucepan from the heat and fold in the shredded coconut and chopped pecans until well coated.
  • Shape the cookies:
    • Using a spoon, drop small mounds of the mixture onto a parchment-lined baking sheet. Shape them into rounds if needed.
  • Let them set:
    • Allow the cookies to cool and set at room temperature for about 30 minutes, or refrigerate for 15 minutes if you’re in a hurry.
