This refreshing dessert layers creamy cheesecake filling, sweet strawberries, and graham crackers for a no-bake treat that’s perfect for summer gatherings, holidays, or anytime you crave something indulgent yet easy to prepare.

For the Layers:

  • 300 g (2 cups) graham crackers (or digestive biscuits)
  • 450 g (16 oz) cream cheese, softened
  • 200 g (1 cup) granulated sugar
  • 250 ml (1 cup) heavy whipping cream, whipped to stiff peaks
  • 1 tsp vanilla extract
  • 500 g (1 lb) fresh strawberries, sliced

For the Strawberry Sauce:

  • 200 g (1 cup) strawberries, diced
  • 50 g (1/4 cup) granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch (optional, for thickening)

For Garnish (Optional):

  • Whipped cream
  • Additional strawberry slices
  • Crushed graham crackers

Instructions

  1. Prepare the Strawberry Sauce:
    • In a small saucepan, combine the diced strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries release their juices and soften (about 5 minutes).
    • Optional: Mix the cornstarch with 1 tbsp of water and stir it into the sauce. Simmer for 1-2 minutes until thickened.
    • Remove from heat and let the sauce cool completely.
  2. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Gently fold in the whipped cream and vanilla extract until fully combined.
  3. Assemble the Lasagna:
    • Spread a thin layer of the cheesecake mixture on the bottom of a 9×13-inch baking dish to act as the base.
    • Arrange a layer of graham crackers over the cheesecake layer, breaking them as needed to fit.
    • Spread 1/3 of the cheesecake mixture over the graham crackers, followed by an even layer of sliced strawberries and a drizzle of the strawberry sauce.
    • Repeat the layers (graham crackers, cheesecake mixture, strawberries, sauce) until all the ingredients are used, ending with a layer of cheesecake mixture on top.
  4. Chill:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the layers to set and the flavors to meld.
  5. Serve:
    • Before serving, garnish with whipped cream, additional strawberry slices, and crushed graham crackers if desired.

Notes

  • You can substitute graham crackers with ladyfingers or shortbread cookies for a different texture.
  • Frozen strawberries can be used for the sauce, but fresh strawberries are best for the layers.
  • For a lighter option, use low-fat cream cheese and whipped topping instead of heavy cream.
