No Bake Summer Berry Lasagna is a cool and creamy layered dessert filled with fresh berries, whipped topping, and a sweet graham cracker crust. It’s easy to make and perfect for summer gatherings.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping (like Cool Whip), divided
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1 cup strawberries, sliced
  • 1 cup blueberries
  • 1 cup raspberries

Instructions

  1. In a bowl, mix graham cracker crumbs with melted butter until evenly coated. Press into the bottom of a 9×13-inch dish to form the crust. Chill for 10 minutes.
  2. In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth. Fold in 1 cup of whipped topping. Spread evenly over the crust.
  3. In another bowl, whisk pudding mix with cold milk until thickened. Spread over the cream cheese layer.
  4. Spread remaining whipped topping over the pudding layer.
  5. Top with an even layer of strawberries, blueberries, and raspberries.
  6. Chill for at least 4 hours or overnight before serving.

Notes

  • Use a mix of your favorite summer berries.
  • Can be made a day in advance and stored in the fridge.
  • For extra flavor, add lemon zest to the cream cheese layer.
