No Beans Chili is a hearty, meat-forward version of traditional chili made without beans, featuring ground beef, tomatoes, and bold spices—perfect for low-carb diets or bean-free preferences.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 1/2 cup beef broth or water (as needed for consistency)
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until softened. Add garlic and sauté for 1 minute more.
  3. Add ground beef, breaking it up with a spoon, and cook until browned and no longer pink. Drain excess fat if needed.
  4. Stir in crushed tomatoes, tomato sauce, tomato paste, and beef broth.
  5. Add chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Stir to combine.
  6. Bring to a simmer, reduce heat to low, and cook uncovered for 30–45 minutes, stirring occasionally, until thickened and flavorful.
  7. Adjust seasoning if needed and serve hot with desired toppings.
