For the Crust:

  • 2 cups graham cracker crumbs (or chocolate cookie crumbs)
  • 1/3 cup unsalted butter, melted
  • 2 tbsp granulated sugar

For the Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped topping (or whipped cream)

For the Banana Layer:

  • 2–3 bananas, sliced

For the Chocolate Ganache:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

For the Topping:

  • 1/4 cup chopped peanuts or pecans
  • Optional: Chocolate shavings or drizzle

Instructions

  1. Prepare the Crust:
    • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until evenly moistened.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Refrigerate for 10–15 minutes to set.
  2. Make the Peanut Butter Filling:
    • In a large bowl, beat the peanut butter, cream cheese, and powdered sugar until smooth.
    • Gently fold in the whipped topping until fully incorporated.
  3. Assemble the Pie:
    • Spread a thin layer of the peanut butter filling over the crust to act as a base.
    • Layer the banana slices evenly over the base layer.
    • Spread the remaining peanut butter filling on top of the bananas, smoothing it with a spatula.
  4. Prepare the Ganache:
    • Heat the heavy cream in a small saucepan or microwave until hot but not boiling.
    • Pour the hot cream over the chocolate chips and let sit for 1–2 minutes. Stir until smooth and glossy.
  5. Add the Ganache and Toppings:
    • Pour the chocolate ganache over the peanut butter layer, spreading it evenly.
    • Sprinkle the chopped nuts on top and add optional chocolate shavings or drizzle.
  6. Chill and Serve:
    • Refrigerate the pie for at least 2 hours, or until fully set.
    • Slice and serve chilled.

Notes

  • Use natural peanut butter for a slightly less sweet version, or substitute with almond or cashew butter.
