These Okra Patties are crispy on the outside, tender on the inside, and packed with the delicious flavor of okra. They’re a great way to enjoy okra without the slime, and they pair perfectly with dipping sauces like ranch or spicy mayo!

Ingredients

Scale
  • 1 ½ cups fresh okra, finely chopped
  • ½ cup yellow onion, finely diced
  • 1 small jalapeño, finely chopped (optional for spice)
  • 1 cup cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons melted butter

  • Vegetable oil (for frying)

Instructions

  1. Prepare the batter:

    • In a large bowl, mix cornmeal, flour, baking powder, salt, pepper, and garlic powder.
    • Stir in chopped okra, onion, and jalapeño (if using).
    • Add buttermilk, egg, and melted butter, and stir until well combined. The mixture should be thick but scoopable.
  2. Fry the patties:

    • Heat about ¼ inch of vegetable oil in a skillet over medium heat.
    • Scoop about 2 tablespoons of batter for each patty and carefully drop them into the hot oil.
    • Flatten slightly with a spatula and cook for 2-3 minutes per side, until golden brown and crispy.
    • Transfer to a plate lined with paper towels to drain excess oil.
  3. Serve and enjoy:

    • Serve warm with your favorite dipping sauce, such as ranch dressing, spicy mayo, or hot sauce.

Notes

  • For extra crunch, add ½ cup shredded cheddar cheese to the batter.
  • Swap buttermilk with almond milk + 1 teaspoon vinegar for a dairy-free version.

  • Use an air fryer at 375°F for about 10-12 minutes, flipping halfway, for a healthier version.
