This Old-Fashioned Potato Candy is a vintage recipe that turns a humble potato into a sweet and creamy treat! With a soft, fudge-like texture and a delicious peanut butter filling, it’s perfect for holidays or as a nostalgic dessert.

  • 1 small russet potato (about 1/2 cup mashed)
  • 45 cups (480600 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1/2 cup (120 g) peanut butter (smooth or crunchy)

Instructions

  1. Cook and mash the potato:
    • Peel and dice the potato. Boil the pieces in salted water until tender, about 10-12 minutes. Drain and mash until completely smooth. Allow the mashed potato to cool to room temperature.
  2. Mix the dough:
    • In a large bowl, add 1/2 cup of mashed potato and vanilla extract. Gradually add the powdered sugar, 1 cup at a time, mixing well after each addition. The mixture will be sticky at first but will eventually form a stiff dough. Stop adding sugar when the dough holds together and can be rolled out without sticking.
  3. Roll out the dough:
    • Dust a clean surface with powdered sugar. Roll out the dough into a rectangle about 1/4 inch thick.
  4. Spread the peanut butter:
    • Evenly spread the peanut butter over the rolled-out dough, leaving a small border around the edges.
  5. Roll the candy:
    • Starting from one long edge, roll the dough into a tight log, like a jelly roll. Wrap the log in plastic wrap and refrigerate for at least 1 hour to firm up.
  6. Slice and serve:
    • Once chilled, unwrap the log and slice it into 1/4-inch pieces. Arrange on a platter and serve.
