12 large white mushrooms, stems removed and cleaned
1/4 cup finely chopped mushroom stems
1/4 cup minced clams, drained
1/4 cup Italian-style breadcrumbs
1/4 cup grated Parmesan cheese
2 tbsp shredded mozzarella cheese
1 clove garlic, minced
2 tbsp chopped fresh parsley
2 tbsp butter, melted
1 tbsp lemon juice
Salt and pepper, to taste
1 tbsp olive oil (for drizzling)
Instructions
Preheat oven to 375°F (190°C).
In a mixing bowl, combine chopped mushroom stems, clams, breadcrumbs, Parmesan, mozzarella, garlic, parsley, melted butter, lemon juice, salt, and pepper.
Stuff each mushroom cap with the filling mixture, mounding slightly.
Place mushrooms in a baking dish and drizzle with olive oil.
Bake for 20–25 minutes, until mushrooms are tender and tops are golden brown.
Garnish with additional parsley and serve warm.
Notes
Substitute clams with chopped shrimp or omit for a vegetarian version.
Add a pinch of red pepper flakes for extra heat.
Can be assembled ahead of time and baked before serving.
