One-Pot Buffalo Ranch Chicken Penne is a creamy, spicy, and tangy pasta dish made with tender chicken, zesty buffalo sauce, ranch seasoning, and melty cheese—all cooked together in one pot for easy cleanup.

  • 1 lb boneless, skinless chicken breast, diced
  • 2 tbsp olive oil
  • 1 packet ranch seasoning mix (1 oz)
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 3 cups chicken broth
  • 2 cups uncooked penne pasta
  • 1/2 cup buffalo wing sauce
  • 4 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken and cook until no longer pink, about 5-6 minutes.
  2. Stir in ranch seasoning, garlic powder, and black pepper. Mix until chicken is evenly coated.
  3. Add chicken broth, buffalo sauce, and uncooked penne pasta to the pot. Stir well.
  4. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 12-15 minutes, stirring occasionally, until pasta is cooked and most of the liquid is absorbed.
  5. Stir in cream cheese until melted and combined, then mix in cheddar cheese until smooth and creamy.
  6. Garnish with chopped green onions, if desired, and serve hot.

  • You can use rotisserie chicken for a shortcut—just reduce cooking time at the beginning.
