- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup ketchup
- 2 tbsp yellow mustard
- 2 cups uncooked pasta (elbow or rotini)
- 1 1/2 cups shredded cheddar cheese
- Salt and pepper to taste
- 1 tbsp olive oil (optional)
- In a large skillet over medium heat, add olive oil (if using), then cook the ground beef until browned. Drain excess fat if necessary.
- Add diced onion and minced garlic, sauté for 2–3 minutes until softened.
- Stir in beef broth, diced tomatoes, ketchup, mustard, and pasta. Bring to a boil.
- Reduce heat to low, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is cooked through.
- Remove from heat and stir in shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste and serve warm.
