This One Pot Chicken Alfredo Pasta is a creamy, comforting dish that’s ready in under 30 minutes! Made with tender chicken, rich Parmesan cheese, and pasta cooked to perfection in a velvety Alfredo sauce—all in a single pot for easy cleanup. Perfect for busy weeknights!

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken broth (low sodium)
  • 1 1/2 cups heavy cream (or half-and-half)
  • 8 ounces fettuccine or penne pasta (uncooked)
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the Chicken:
    • Heat olive oil in a large, deep skillet or pot over medium-high heat.
    • Add chicken pieces, season with salt, pepper, and Italian seasoning.
    • Cook for 5-7 minutes, until chicken is golden and cooked through.
    • Remove chicken from the pot and set aside.

  1. Sauté Garlic:
    • In the same pot, add butter and minced garlic.
    • Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

  1. Add Liquids and Pasta:
    • Pour in chicken broth and heavy cream, stirring well.
    • Bring to a simmer over medium heat.

  1. Cook the Pasta:
    • Add the uncooked pasta to the pot.
    • Stir to ensure pasta is submerged in the liquid.
    • Cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.

  1. Add Chicken and Cheese:
    • Return the cooked chicken to the pot.
    • Stir in Parmesan cheese until melted and the sauce is creamy.
    • Add more broth or cream if the sauce is too thick.

  1. Serve:
    • Garnish with fresh parsley and a sprinkle of extra Parmesan if desired.
    • Serve immediately and enjoy!
