A comforting and easy one-pot creamy chicken pasta that’s rich, flavorful, and perfect for a quick weeknight dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat.
  2. Add chicken pieces, season with Italian seasoning, salt, and pepper, and cook until browned, about 5-6 minutes.
  3. Add minced garlic and sauté for another 1 minute.
  4. Pour in chicken broth and heavy cream, and bring to a simmer.
  5. Add pasta, stirring to submerge it in the liquid.
  6. Cover and cook, stirring occasionally, until pasta is tender and most of the liquid is absorbed, about 12-15 minutes.
  7. Stir in Parmesan cheese until melted and creamy.
  8. Optional: Add baby spinach and cook until wilted, about 2 minutes.
  9. Garnish with fresh parsley and serve hot.

Notes

  • Use rotisserie chicken for an even quicker version.
  • Adjust the cream and broth ratio based on desired sauce thickness.
  • Add mushrooms or sun-dried tomatoes for extra flavor.
