One-Pot Creamy Garlic Chicken Pasta

A rich and comforting pasta dish made in just one pot! Tender chicken, a creamy garlic sauce, and perfectly cooked pasta make this an easy and delicious weeknight meal.

For the Chicken:
  • 2 boneless, skinless chicken breasts (or 3 boneless thighs), cut into bite-sized pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • 1 tbsp olive oil
For the Pasta & Sauce:

  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1½ cups milk
  • 8 oz (225g) pasta (penne, fettuccine, or linguine)
  • 1 cup grated Parmesan cheese
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the chicken:

    • Heat olive oil in a large pot over medium-high heat.
    • Add the chicken pieces, season with salt, pepper, Italian seasoning, and smoked paprika.
    • Cook for 5-6 minutes until golden brown and fully cooked. Remove from the pot and set aside.
  2. Make the sauce:

    • In the same pot, melt butter and add minced garlic. Sauté for about 1 minute until fragrant.
    • Pour in the chicken broth, heavy cream, and milk. Stir to combine.
  3. Cook the pasta:

    • Add the pasta directly into the pot with the sauce. Stir occasionally to prevent sticking.
    • Simmer for 10-12 minutes (or according to pasta package instructions) until the pasta is tender.
  4. Add the cheese & chicken:

    • Lower the heat and stir in the Parmesan cheese.
    • Return the cooked chicken to the pot and mix well. Adjust seasoning with extra salt, pepper, or red pepper flakes if desired.
  5. Serve & Enjoy:

    • Garnish with fresh parsley and serve warm!

Notes

  • Use rotisserie chicken for an even quicker meal.
  • For a lighter version, swap heavy cream with half-and-half or evaporated milk.
  • Add mushrooms, spinach, or sun-dried tomatoes for extra flavor.
