Ingredients

Scale
  • 1 tablespoon olive oil
  • 12 oz kielbasa sausage, sliced into rounds
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 2 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 8 oz pasta (penne, rotini, or rigatoni)
  • 1 ½ cups shredded cheddar cheese (or mozzarella)
  • ½ cup parmesan cheese, grated
  • Salt & black pepper, to taste
  • 1 tablespoon butter (for extra richness)

For Garnish:

  • 2 tablespoons fresh parsley, chopped
  • Extra parmesan cheese

Instructions

Step 1: Cook the Kielbasa

  1. Heat olive oil in a large skillet or pot over medium heat.
  2. Add sliced kielbasa and cook for 3-4 minutes per side until browned. Remove from the pot and set aside.

Step 2: Sauté the Aromatics

  1. In the same pot, add onion and cook for 2-3 minutes until softened.
  2. Stir in garlic, smoked paprika, Italian seasoning, and red pepper flakes; cook for 30 seconds until fragrant.

Step 3: Cook the Pasta

  1. Pour in chicken broth and heavy cream, stirring to combine.
  2. Add pasta and bring to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender.

Step 4: Add the Cheese & Kielbasa

  1. Reduce heat to low and stir in cheddar cheese, parmesan, and butter until melted.
  2. Add the browned kielbasa back to the pot and stir to coat in the creamy sauce.
  3. Taste and season with salt and black pepper as needed.

Step 5: Garnish & Serve

  1. Sprinkle with fresh parsley and extra parmesan before serving.
  2. Enjoy warm!

Notes

  • Want it lighter? Use half-and-half instead of heavy cream.
  • Spicy Kick? Add extra red pepper flakes or use a spicy kielbasa.
  • Extra Veggies? Stir in spinach, mushrooms, or bell peppers in Step 2.
