This One Pot Creamy Mac and Cheese is a simple, indulgent dish made with minimal ingredients and no extra pots. It’s perfect for a quick dinner, side dish, or a comforting meal the whole family will love.

  • 2 cups (200g) elbow macaroni or your favorite pasta
  • 2 1/2 cups (600ml) whole milk (or substitute with 2% milk)
  • 1/2 cup (120ml) water
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt (adjust to taste)
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1/2 cup (50g) shredded mozzarella or Parmesan cheese (optional, for extra creaminess)
  • 2 tablespoons (30g) unsalted butter
  • Black pepper, to taste

Instructions

1. Cook the Pasta:
  1. In a large pot or deep skillet, combine the macaroni, milk, water, garlic powder, smoked paprika (if using), and salt.
  2. Bring to a gentle simmer over medium heat, stirring frequently to prevent the pasta from sticking to the bottom.
2. Simmer Until Tender:
  1. Continue to simmer for 8–10 minutes, or until the pasta is tender and most of the liquid has been absorbed. Stir frequently to ensure even cooking and prevent sticking.
3. Add the Cheese and Butter:
  1. Reduce the heat to low. Stir in the cheddar cheese, mozzarella or Parmesan (if using), and butter.
  2. Mix until the cheese is completely melted and the sauce is creamy. If the sauce is too thick, add a splash of milk to adjust the consistency.
4. Season and Serve:
  1. Season with additional salt and black pepper to taste.
  2. Serve immediately while warm and creamy. Garnish with fresh parsley or a sprinkle of paprika, if desired.

Notes

  • For extra flavor, mix in cooked bacon, sautéed vegetables, or diced ham.
  • Use any combination of cheeses, such as Gruyère, Monterey Jack, or Colby, to customize the flavor.
