Ingredients

Scale
  • 12 oz spaghetti or fettuccine
  • 4 cups chicken or vegetable broth (low-sodium)
  • 1 cup milk (dairy or unsweetened non-dairy)
  • 1 tbsp olive oil or unsalted butter
  • 4 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • 1 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Sauté the Garlic:
    • Heat olive oil or butter in a large pot over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  2. Add Liquid and Pasta:
    • Pour in the chicken or vegetable broth and milk. Stir in garlic powder, red pepper flakes (if using), and a pinch of salt and pepper. Bring the mixture to a boil.
    • Add the pasta to the pot, making sure it is submerged in the liquid. Reduce heat to medium-low and simmer, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed (about 10–12 minutes).
  3. Add Parmesan Cheese:
    • Once the pasta is cooked, stir in the Parmesan cheese. Mix until the cheese is melted and the sauce is creamy. Adjust the seasoning with more salt and pepper if needed.
  4. Serve:
    • Divide the pasta among serving plates. Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.

Notes

  • For a protein boost, add cooked chicken, shrimp, or sausage.
  • You can substitute heavy cream for milk for an even creamier texture.
  • Use gluten-free pasta if needed, but adjust cooking times as per the package instructions.
  • Add steamed vegetables like broccoli or spinach for extra nutrients.
