For the Chicken:

For the Sauce:

  • 1/4 cup honey
  • 1/4 cup soy sauce (low sodium recommended)
  • 2 tablespoons rice vinegar
  • 3 garlic cloves (minced)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger

For the Noodles and Veggies:

  • 8 oz spaghetti or lo mein noodles (uncooked)
  • 2 cups chicken broth
  • 1 1/2 cups water
  • 1 cup broccoli florets
  • 1 red bell pepper (sliced thin)
  • 1/2 cup shredded carrots

Optional Garnishes:

  • Sliced green onions
  • Sesame seeds

Instructions

  1. Cook the chicken:
    • Heat olive oil in a large pot or deep skillet over medium-high heat.
    • Season the chicken pieces with salt and pepper, then add them to the pot. Cook for 5–6 minutes, or until browned and cooked through. Remove the chicken and set aside.
  2. Prepare the sauce:
    • In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, sesame oil, and ground ginger. Set aside.
  3. Add the liquids and noodles:
    • In the same pot, pour in the chicken broth and water. Bring to a boil.
    • Add the uncooked noodles, stirring occasionally to ensure they don’t stick together. Reduce heat to medium and let the noodles cook for about 5 minutes.
  4. Add the veggies:
    • Stir in the broccoli, bell pepper, and shredded carrots. Cover and cook for an additional 3–5 minutes, or until the veggies are tender and the noodles have absorbed most of the liquid.
  5. Combine the chicken and sauce:
    • Return the cooked chicken to the pot. Pour the honey garlic sauce over the noodles and chicken. Toss everything together to coat evenly. Simmer for 2–3 minutes, allowing the flavors to meld.
  6. Serve:
    • Divide into bowls and garnish with sliced green onions and sesame seeds if desired. Serve hot and enjoy!
