A flavorful and easy one-pot Italian chicken pasta dish loaded with tender chicken, aromatic herbs, and a creamy tomato sauce—all cooked together for minimal cleanup and maximum flavor.

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 8 oz penne or your preferred pasta
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach (optional)
  • Fresh basil for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chicken, Italian seasoning, garlic powder, salt, and pepper. Cook until browned and cooked through, about 5-6 minutes.
  2. Add diced onion and garlic. Sauté for 2-3 minutes until softened.
  3. Pour in chicken broth, diced tomatoes (with juices), and heavy cream. Stir to combine.
  4. Add pasta and bring mixture to a boil. Reduce heat to a simmer and cook uncovered, stirring occasionally, for 12-15 minutes or until pasta is tender and sauce is thickened.
  5. Stir in Parmesan cheese and baby spinach (if using) until wilted.
  6. Remove from heat and let sit for 2-3 minutes before serving. Garnish with fresh basil if desired.

Notes

  • Use rotisserie chicken for a quicker version.
  • Can be made with whole wheat or gluten-free pasta.
  • Add red pepper flakes for a spicy kick.
