This One Pot Lasagna Pasta delivers all the hearty flavors of traditional lasagna in a fraction of the time! With tender pasta, a rich tomato-meat sauce, and gooey melted cheese, it’s a comforting, family-friendly meal perfect for busy weeknights.

Ingredients

For the pasta:

  • 1 tbsp olive oil
  • 1 lb (450g) ground beef or Italian sausage
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 1 can (28 oz/800g) crushed tomatoes
  • 3 cups (720ml) chicken or beef broth
  • 2 tbsp tomato paste
  • 8 oz (225g) uncooked lasagna noodles, broken into pieces
  • Salt and pepper, to taste

For the cheese topping:

  • 1 cup (250g) ricotta cheese
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Cook the meat:
    • Heat olive oil in a large pot or deep skillet over medium heat. Add ground beef or sausage and cook until browned, breaking it into small pieces with a spoon. Drain any excess fat.
  2. Sauté the aromatics:
    • Add the onion and cook for 3-4 minutes, until softened. Stir in garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute, or until fragrant.
  3. Build the sauce:
    • Stir in the crushed tomatoes, broth, and tomato paste. Bring the mixture to a simmer.
  4. Cook the pasta:
    • Add the broken lasagna noodles to the pot. Stir to submerge the noodles in the sauce. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened. Adjust seasoning with salt and pepper.
  5. Add the cheese topping:
    • Spoon dollops of ricotta cheese over the pasta. Sprinkle with mozzarella and Parmesan cheeses. Cover the pot and cook for 2-3 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Garnish with fresh parsley and serve warm. Pair with a green salad or garlic bread for a complete meal.


Notes

  • For added veggies, stir in a handful of spinach or diced zucchini during the last 5 minutes of cooking.
