This One-Pot Marry Me Chicken Pasta is creamy, comforting, and packed with flavor. Juicy chicken is cooked with sun-dried tomatoes, garlic, and Italian seasoning, then tossed with pasta in a rich parmesan cream sauce—all in one pot! It’s quick enough for a weeknight but fancy enough for date night.
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
4 cloves garlic, minced
1/2 cup sun-dried tomatoes (in oil), chopped
2 1/2 cups chicken broth
1 cup heavy cream
8 oz penne pasta (or any short pasta)
3/4 cup grated parmesan cheese
Fresh basil or parsley, chopped (for garnish)
Heat olive oil in a large skillet or pot over medium heat. Add chicken, season with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, about 5–7 minutes. Remove chicken and set aside.
In the same pot, add garlic, sun-dried tomatoes, and red pepper flakes. Cook for 1–2 minutes until fragrant.
Pour in the chicken broth and heavy cream. Stir to combine, then bring to a boil.
Add the uncooked pasta. Reduce heat to a simmer and cook for 12–15 minutes, stirring occasionally, until the pasta is al dente and sauce has thickened.
Stir in the parmesan cheese and return the cooked chicken to the pot. Mix well to coat everything in the creamy sauce.
Remove from heat. Garnish with chopped basil or parsley and serve warm.

If the sauce gets too thick, add a splash of broth or cream to loosen it.
