This One Pot Sausage Pasta is a hearty and flavorful weeknight meal made with savory sausage, tender pasta, and a creamy tomato sauce—all cooked together in a single pot for easy cleanup.

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 3 cups chicken broth
  • 12 oz pasta (penne or rotini)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Add diced onion and garlic, sauté for 3-4 minutes until softened.
  3. Stir in diced tomatoes, tomato paste, chicken broth, and Italian seasoning. Bring to a simmer.
  4. Add the pasta and stir to combine. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until sauce is creamy and well combined.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped parsley and serve hot.

Notes

  • You can use any short pasta shape you like.
  • Spicy Italian sausage adds extra flavor, but mild works great too.
  • For a lighter version, substitute half-and-half for heavy cream.
