1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
2 tbsp tomato paste
3 cups chicken broth
12 oz pasta (penne or rotini)
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
Add diced onion and garlic, sauté for 3-4 minutes until softened.
Stir in diced tomatoes, tomato paste, chicken broth, and Italian seasoning. Bring to a simmer.
Add the pasta and stir to combine. Cover and cook for 12-15 minutes, stirring occasionally, until pasta is tender.
Reduce heat to low and stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes until sauce is creamy and well combined.
Season with salt and pepper to taste.
Garnish with chopped parsley and serve hot.
Notes
You can use any short pasta shape you like.
Spicy Italian sausage adds extra flavor, but mild works great too.
For a lighter version, substitute half-and-half for heavy cream.
