Oreo Cheesecake Bites are rich, creamy mini cheesecakes made with a whole Oreo cookie base, smooth cream cheese filling, and crushed Oreos mixed in for a perfect bite-sized dessert.

  • 18 Oreo cookies (12 whole for base, 6 crushed for filling)
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 275°F (135°C). Line a muffin tin with 12 cupcake liners and place one whole Oreo at the bottom of each liner.
  2. In a large bowl, beat cream cheese until smooth and creamy.
  3. Add sugar and mix until combined.
  4. Beat in eggs one at a time, scraping down the sides of the bowl as needed.
  5. Add sour cream, vanilla extract, and salt, mixing until smooth.
  6. Fold in the crushed Oreos gently.
  7. Spoon the cheesecake mixture evenly over the Oreo bases in the liners.
  8. Bake for 22–25 minutes, until centers are set but still slightly jiggly.
  9. Let cool in the pan, then chill in the refrigerator for at least 2 hours before serving.

Notes

  • Top with whipped cream and mini Oreos for extra presentation.
  • Store in the refrigerator for up to 5 days or freeze for longer storage.
  • Use a food processor to crush Oreos evenly for the filling.
