These Oven Baked Beef Taquitos are crispy, flavorful, and healthier than their fried counterpart. Packed with seasoned ground beef and melty cheese, they’re perfect as a snack, appetizer, or easy dinner. Serve with your favorite dips like salsa, guacamole, or sour cream!

Ingredients

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 (1 oz) packet taco seasoning or homemade taco seasoning (see Notes)
  • ¼ cup water
  • 1 ½ cups shredded cheddar or Monterey Jack cheese
  • 12 small flour or corn tortillas
  • 2 tbsp olive oil or cooking spray

  • Salsa
  • Guacamole
  • Sour cream
  • Chopped cilantro

Instructions

  • Preheat Oven:
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  • Cook the Beef:
    Heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  • Add Seasoning:
    Stir in the diced onion, minced garlic, and taco seasoning. Cook for 2-3 minutes until the onion is softened. Add ¼ cup of water and simmer for another 2 minutes, allowing the flavors to meld. Remove from heat.
  • Assemble Taquitos:
    Warm the tortillas in the microwave for 20-30 seconds to make them pliable. Place 2-3 tablespoons of the beef mixture and a sprinkle of shredded cheese onto one end of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
  • Brush or Spray with Oil:
    Lightly brush the taquitos with olive oil or spray with cooking spray to help them crisp up in the oven.
  • Bake:
    Bake for 15-20 minutes, or until the taquitos are golden and crispy.
  • Serve:
    Remove from the oven and let cool slightly before serving. Serve with salsa, guacamole, or sour cream for dipping.

Notes

  • Homemade Taco Seasoning: Combine 1 tsp chili powder, ½ tsp cumin, ½ tsp garlic powder, ¼ tsp onion powder, ¼ tsp paprika, and a pinch of cayenne pepper.
  • Use corn tortillas for a gluten-free option. If using corn tortillas, lightly warm them in oil to prevent cracking during rolling.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer for crispiness.
