Oven roasted corn is a simple, flavorful side dish that brings out the natural sweetness of corn with a slightly charred, caramelized finish.

Ingredients

  • 4 ears of corn, husked
  • 2 tbsp olive oil or melted butter
  • Salt to taste
  • Pepper to taste
  • Optional: garlic powder, paprika, or chopped herbs for extra flavor

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place corn on a baking sheet lined with foil or parchment paper.
  3. Brush each ear of corn with olive oil or melted butter.
  4. Season with salt, pepper, and any optional spices or herbs.
  5. Roast in the oven for 25–30 minutes, turning occasionally, until corn is golden and lightly browned in spots.
  6. Remove from oven and serve warm.

Notes

  • You can also wrap the corn individually in foil for a softer texture.
  • Great with a squeeze of lime and sprinkle of cheese for a Mexican-style twist.
  • Leftover roasted corn can be cut off the cob and added to salads, salsas, or soups.
