This Oven-Roasted Shrimp Cocktail is a bold and flavorful spin on the traditional chilled version. Juicy shrimp are tossed in olive oil and Old Bay seasoning, then roasted to perfection for a tender texture and smoky flavor. Served with classic cocktail sauce, it’s the perfect appetizer for any gathering.
For the Shrimp:
1 1/2 lbs large shrimp, peeled and deveined (tails on)
1 tbsp olive oil
1 1/2 tsp Old Bay seasoning
1/4 tsp salt
1/4 tsp black pepper
Lemon wedges, for serving
For the Cocktail Sauce:
1/2 cup ketchup
2 tbsp prepared horseradish (more or less to taste)
1 tsp Worcestershire sauce
1 tsp lemon juice
Dash of hot sauce (optional)
Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
Prep the shrimp: In a large bowl, toss the shrimp with olive oil, Old Bay, salt, and pepper until evenly coated.
Roast: Spread the shrimp in a single layer on the baking sheet. Roast for 8–10 minutes, or until pink and just cooked through. Let cool slightly.
Make the cocktail sauce: In a small bowl, whisk together ketchup, horseradish, Worcestershire sauce, lemon juice, and hot sauce if using. Chill until ready to serve.
Serve: Arrange shrimp on a platter with lemon wedges and a bowl of cocktail sauce for dipping. Serve warm or at room temperature.
Roasting brings out the natural sweetness of the shrimp and gives them a little extra depth.
You can prep the cocktail sauce a day ahead and store it in the fridge.
For extra flavor, squeeze a bit of lemon juice over the shrimp right after roasting.
