This Oven-Roasted Shrimp Cocktail is a bold and flavorful spin on the traditional chilled version. Juicy shrimp are tossed in olive oil and Old Bay seasoning, then roasted to perfection for a tender texture and smoky flavor. Served with classic cocktail sauce, it’s the perfect appetizer for any gathering.

For the Shrimp:

  • 1 1/2 lbs large shrimp, peeled and deveined (tails on)

  • 1 tbsp olive oil

  • 1 1/2 tsp Old Bay seasoning

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • Lemon wedges, for serving

For the Cocktail Sauce:

  • 1/2 cup ketchup

  • 2 tbsp prepared horseradish (more or less to taste)

  • 1 tsp Worcestershire sauce

  • 1 tsp lemon juice

  • Dash of hot sauce (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.

  2. Prep the shrimp: In a large bowl, toss the shrimp with olive oil, Old Bay, salt, and pepper until evenly coated.

  3. Roast: Spread the shrimp in a single layer on the baking sheet. Roast for 8–10 minutes, or until pink and just cooked through. Let cool slightly.

  4. Make the cocktail sauce: In a small bowl, whisk together ketchup, horseradish, Worcestershire sauce, lemon juice, and hot sauce if using. Chill until ready to serve.

  5. Serve: Arrange shrimp on a platter with lemon wedges and a bowl of cocktail sauce for dipping. Serve warm or at room temperature.

Notes

  • Roasting brings out the natural sweetness of the shrimp and gives them a little extra depth.

  • You can prep the cocktail sauce a day ahead and store it in the fridge.

  • For extra flavor, squeeze a bit of lemon juice over the shrimp right after roasting.
