4 tbsp unsalted butter
1 small onion, finely chopped
1 celery stalk, finely chopped
2 cups whole milk
1 cup heavy cream
Salt and black pepper to taste
1/4 tsp paprika (optional)
2 tbsp chopped fresh parsley (for garnish)
Oyster crackers or crusty bread for serving
Instructions
In a saucepan, melt butter over medium heat.
Add chopped onion and celery and sauté until soft, about 5 minutes.
Pour in the oyster liquor (strained if needed) and bring to a gentle simmer.
Add the oysters and cook just until their edges curl, about 2-3 minutes.
Reduce heat to low and stir in the milk and cream. Do not boil.
Season with salt, pepper, and paprika if using. Heat gently until warmed through.
Remove from heat and let rest for 5 minutes to allow flavors to meld.
Serve hot, garnished with chopped parsley and accompanied by oyster crackers or bread.
