Pancake Sausage Casserole is a hearty and comforting breakfast bake that layers fluffy pancakes with savory sausage, all baked together in a rich, eggy custard and topped with maple syrup.

  • 8 pre-cooked pancakes
  • 1 lb breakfast sausage
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup maple syrup, plus extra for serving
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Butter or nonstick spray for greasing

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cook sausage in a skillet over medium heat until browned and crumbled. Drain excess fat.
  3. Layer half the pancakes in the bottom of the prepared baking dish.
  4. Sprinkle cooked sausage evenly over the pancakes.
  5. Top with remaining pancakes to form a second layer.
  6. In a large bowl, whisk together eggs, milk, maple syrup, vanilla, cinnamon, salt, and pepper.
  7. Pour the egg mixture evenly over the casserole.
  8. Let sit for 10 minutes to allow the pancakes to soak up the custard.
  9. Bake for 40–45 minutes, or until the center is set and top is golden.
  10. Serve warm with additional maple syrup if desired.
