This homemade version of the popular Panera Fuji Apple Salad is sweet, tangy, and crisp—loaded with greens, grilled chicken, apples, pecans, and Gorgonzola cheese, all tossed in a light apple vinaigrette. It’s a refreshing and satisfying salad you can enjoy as a main dish or a hearty side.
For the Salad:
4 cups mixed greens (spring mix or arugula)
1 grilled chicken breast, sliced
1/2 cup dried apple chips or thinly sliced fresh apple
1/4 cup crumbled Gorgonzola or blue cheese
1/4 cup candied pecans (or plain toasted pecans)
1/4 cup cherry tomatoes, halved (optional)
Red onion slices, to taste
For the Fuji Apple Vinaigrette:
1/4 cup apple cider vinegar
2 tablespoons olive oil
1 tablespoon honey or maple syrup
1 tablespoon apple juice (or water)
1/2 teaspoon Dijon mustard
Salt and black pepper, to taste
In a small bowl or jar, whisk together all vinaigrette ingredients until well combined. Set aside.
In a large bowl, layer the mixed greens, sliced chicken, apple chips or fresh apples, Gorgonzola, pecans, onions, and cherry tomatoes.
Drizzle with Fuji apple vinaigrette and toss gently to combine.
Serve immediately.
For a vegetarian version, skip the chicken or sub in roasted chickpeas.
Swap Gorgonzola for goat cheese or feta if preferred.
