This homemade version of the popular Panera Fuji Apple Salad is sweet, tangy, and crisp—loaded with greens, grilled chicken, apples, pecans, and Gorgonzola cheese, all tossed in a light apple vinaigrette. It’s a refreshing and satisfying salad you can enjoy as a main dish or a hearty side.

Ingredients

For the Salad:

  • 4 cups mixed greens (spring mix or arugula)

  • 1 grilled chicken breast, sliced

  • 1/2 cup dried apple chips or thinly sliced fresh apple

  • 1/4 cup crumbled Gorgonzola or blue cheese

  • 1/4 cup candied pecans (or plain toasted pecans)

  • 1/4 cup cherry tomatoes, halved (optional)

  • Red onion slices, to taste

For the Fuji Apple Vinaigrette:

  • 1/4 cup apple cider vinegar

  • 2 tablespoons olive oil

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon apple juice (or water)

  • 1/2 teaspoon Dijon mustard

  • Salt and black pepper, to taste

Instructions

  • In a small bowl or jar, whisk together all vinaigrette ingredients until well combined. Set aside.

  • In a large bowl, layer the mixed greens, sliced chicken, apple chips or fresh apples, Gorgonzola, pecans, onions, and cherry tomatoes.

  • Drizzle with Fuji apple vinaigrette and toss gently to combine.

 

  • Serve immediately.

Notes

  • For a vegetarian version, skip the chicken or sub in roasted chickpeas.

  • Swap Gorgonzola for goat cheese or feta if preferred.

 

  • Apple chips add crunch, but fresh apple slices work great too.
