  • 1/2 teaspoon dried parsley (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • Lemon wedges (for serving)

Instructions

Preheat the Oven:
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. Prepare the Crust Mixture:
  1. In a small bowl, combine the grated Parmesan, breadcrumbs, garlic powder, paprika, parsley (if using), salt, and pepper. Mix well.
  2. Stir in the melted butter until the mixture resembles damp sand.
3. Prepare the Cod Fillets:
  1. Pat the cod fillets dry with paper towels and season them lightly with salt and pepper on both sides.
  2. Place the fillets on the prepared baking sheet. Brush the tops with olive oil to help the crust adhere.
4. Apply the Parmesan Crust:
  1. Spoon the Parmesan mixture onto each fillet, pressing gently to create an even layer.
5. Bake:
  1. Bake the cod in the preheated oven for 12–15 minutes, depending on the thickness of the fillets, until the crust is golden brown and the fish flakes easily with a fork.
6. Serve:
  1. Serve hot with lemon wedges on the side. Pair with a fresh salad, roasted vegetables, or rice for a complete meal.
