Ingredients

Scale
  • 1 ½ lbs (680g) carrots, peeled and cut into sticks or rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat Oven:

    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper for easy cleanup.
  2. Season the Carrots:

    • In a large bowl, toss the carrots with olive oil, garlic, salt, pepper, and Italian seasoning (if using).
    • Add half of the Parmesan cheese and toss until the carrots are evenly coated.
  3. Roast the Carrots:

    • Arrange the carrots in a single layer on the prepared baking sheet.
    • Roast for 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
  4. Add More Parmesan:

    • Sprinkle the remaining Parmesan cheese over the carrots and return to the oven for an additional 5 minutes, until the cheese is melted and golden.
  5. Serve:

    • Garnish with fresh parsley and a squeeze of lemon juice, if desired. Serve warm.

Notes

  • Use rainbow carrots for a colorful presentation.
  • Swap Parmesan for nutritional yeast to make it dairy-free.
  • Add a pinch of red pepper flakes for a spicy kick.
