3/4 cup pastina pasta (tiny star-shaped pasta)
2 tablespoons butter
1 egg
2 tablespoons grated Parmesan cheese
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions
In a large pot, bring the chicken broth to a boil.
Add the pastina and cook according to package instructions until tender, about 5-7 minutes.
While the pastina cooks, beat the egg in a small bowl and stir in the Parmesan cheese.
Once the pastina is cooked, lower the heat to a simmer and slowly drizzle in the egg mixture while stirring continuously to create thin egg ribbons.
Stir in the butter until melted.
Season with salt and pepper to taste.
