Pastina Soup is a cozy and comforting Italian classic made with tiny pasta stars simmered in a rich broth, perfect for a light meal or soothing remedy.

  • 6 cups chicken broth
  • 3/4 cup pastina pasta (tiny star-shaped pasta)
  • 2 tablespoons butter
  • 1 egg
  • 2 tablespoons grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the pastina and cook according to package instructions until tender, about 5-7 minutes.
  3. While the pastina cooks, beat the egg in a small bowl and stir in the Parmesan cheese.
  4. Once the pastina is cooked, lower the heat to a simmer and slowly drizzle in the egg mixture while stirring continuously to create thin egg ribbons.
  5. Stir in the butter until melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.
