A warm and comforting peach crisp made with juicy, sweet peaches topped with a buttery oat crumble. Easy to make and perfect served with a scoop of vanilla ice cream.

  • 6 cups fresh peaches, peeled and sliced (about 67 peaches)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch square or similar baking dish.
  2. In a large bowl, toss sliced peaches with granulated sugar, cornstarch, lemon juice, and cinnamon. Pour into the prepared baking dish.
  3. In another bowl, combine oats, flour, brown sugar, and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture is crumbly.
  4. Sprinkle the oat crumble evenly over the peaches.
  5. Bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  6. Allow to cool slightly before serving. Best enjoyed warm with vanilla ice cream or whipped cream.

Notes

  • Frozen peaches can be used if fresh peaches aren’t in season—just thaw and drain them first.
  • Add chopped pecans or walnuts to the crumble for extra crunch.
  • Leftovers can be stored covered in the refrigerator for up to 3 days and reheated.
