Peach pie crumble bars are a delightful dessert that combines the juicy sweetness of peaches with a buttery, crumbly crust and topping. These bars are easy to make and perfect for summer gatherings, potlucks, or as a comforting treat any time of year.

For the crust and crumble topping:

  • 1 cup (225 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 3 cups (375 g) all-purpose flour

For the peach filling:

  • 4 cups (600 g) fresh or canned peaches, peeled and diced
  • 1/3 cup (65 g) granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a 9×13-inch (23×33 cm) baking dish with parchment paper, leaving some overhang for easy removal.
  2. Make the crust and crumble topping:
    • In a large bowl, mix together the melted butter, granulated sugar, brown sugar, vanilla extract, and salt until smooth.
    • Add the flour and stir until a crumbly dough forms. Reserve 1 1/2 cups of the mixture for the crumble topping.
    • Press the remaining dough evenly into the prepared baking dish to form the crust. Bake for 10 minutes, then set aside.
  3. Prepare the peach filling:
    • In a medium bowl, toss the diced peaches with granulated sugar, cornstarch, cinnamon, and lemon juice until evenly coated.
  4. Assemble the bars:
    • Spread the peach filling evenly over the partially baked crust.
    • Sprinkle the reserved crumble mixture evenly over the peaches.
  5. Bake:
    • Bake in the preheated oven for 35–40 minutes, or until the topping is golden brown and the peaches are bubbly.
  6. Cool and slice:
    • Allow the bars to cool completely in the pan before lifting them out using the parchment overhang. Slice into squares or bars and serve.

  • Substitute peaches with other fruits like apples, berries, or pears for variety.
  • Use canned or frozen peaches when fresh ones are unavailable. Just ensure they are well-drained.
  • Serve warm with a scoop of vanilla ice cream for an extra indulgent treat.
