Peanut Butter Balls with Rice Krispies are no-bake, bite-sized treats made with creamy peanut butter, crispy rice cereal, and chocolate coating. They’re easy to make and perfect for holidays, parties, or an anytime sweet snack.

  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups semisweet chocolate chips
  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate coating)

Instructions

  1. In a large bowl, mix peanut butter, softened butter, and vanilla extract until smooth.
  2. Gradually stir in powdered sugar until well combined.
  3. Add Rice Krispies cereal and mix gently until evenly coated.
  4. Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
  5. Chill in the refrigerator for 30 minutes to firm up.
  6. In a microwave-safe bowl, melt chocolate chips and coconut oil (if using) in 30-second intervals, stirring until smooth.
  7. Dip each chilled peanut butter ball into melted chocolate, coating completely. Place back on the parchment-lined sheet.
  8. Chill again until chocolate is set. Store in an airtight container in the refrigerator.
