Ingredients

  • 1 cup natural creamy peanut butter

  • ¼ cup honey or maple syrup

  • ½ teaspoon vanilla extract

  • ⅓ cup mini chocolate chips

  • ¼ teaspoon salt

  • 2 tablespoons ground flaxseed

  • ⅓ cup oat flour (or blended rolled oats)

  • ¼ cup protein powder (optional – vanilla or unflavored)

Instructions

  1. Mix Wet Ingredients:
    In a medium bowl, stir together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.

  2. Add Dry Ingredients:
    Mix in the salt, flaxseed, oat flour, and protein powder (if using). Stir until fully combined. Fold in chocolate chips.

  3. Roll Into Balls:
    Using a small cookie scoop or your hands, roll the mixture into 1-inch balls. If the dough is too sticky, chill for 10–15 minutes first.

  4. Chill and Store:
    Place in an airtight container and refrigerate for at least 30 minutes to firm up. Store in the fridge for up to 1 week or freeze for longer.

Notes

  • Oat flour can be made by blending rolled oats in a food processor.

  • Make it vegan by using maple syrup and dairy-free chocolate chips.

  • For a crunchy twist, stir in chopped peanuts or a sprinkle of sea salt on top.
