Peanut Butter Pretzel Bites are a sweet and salty no-bake treat made with creamy peanut butter sandwiched between pretzels and dipped in chocolate—perfect for parties, snacks, or edible gifts.

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup powdered sugar
  • About 50 mini pretzels
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

  1. In a medium bowl, mix together peanut butter, softened butter, brown sugar, and powdered sugar until smooth and well combined.
  2. Roll mixture into small balls (about 1 teaspoon each) and sandwich between two pretzels. Place on a parchment-lined baking sheet.
  3. Freeze the pretzel sandwiches for 30 minutes to firm up.
  4. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  5. Dip each frozen pretzel sandwich halfway into the melted chocolate and place back on the baking sheet.
  6. Refrigerate for about 15–20 minutes, or until chocolate is set.
  7. Store in an airtight container in the fridge for up to 1 week.
