  • 1 teaspoon coconut oil or vegetable shortening (for smooth melting)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt (optional, for garnish)

Instructions

  1. Melt the chocolate:

    • In a microwave-safe bowl, combine semi-sweet chocolate chips and coconut oil.
    • Microwave in 30-second intervals, stirring in between, until smooth. (Alternatively, melt using a double boiler.)
    • Stir in vanilla extract.
  2. Mix in the peanuts:

    • Add peanuts to the melted chocolate and stir until evenly coated.
  3. Form the clusters:

    • Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
