1/3 cup creamy peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp lime juice
1 tbsp honey or maple syrup
1 clove garlic, minced
1 tsp grated fresh ginger
1–2 tbsp warm water (to thin)
Optional: 1 tsp sesame oil or a pinch of red pepper flakes for extra flavor
Instructions
In a bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, and honey until smooth.
Add garlic, ginger, and sesame oil or red pepper flakes if using.
Gradually whisk in warm water until the dressing reaches your desired consistency.
Taste and adjust seasonings as needed.
Use immediately or refrigerate in an airtight container for up to 1 week.
Notes
Add more lime juice or vinegar for extra tanginess.
