Pecan sugar cookies are soft, buttery treats with a delicate crunch from finely chopped pecans, offering a nutty twist on the classic sugar cookie.

Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup finely chopped pecans
  • Additional sugar for rolling (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Fold in chopped pecans.
  7. Roll dough into 1-inch balls and, if desired, roll in extra granulated sugar.
  8. Place on prepared baking sheets, spacing about 2 inches apart, and gently flatten each ball with the bottom of a glass.
  9. Bake for 10–12 minutes or until the edges are lightly golden.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Toasting the pecans before adding them enhances their flavor.
  • Dough can be chilled for 30 minutes for easier handling.
  • Store cookies in an airtight container for up to 5 days.
