12 oz penne pasta
1 tbsp olive oil
3 cloves garlic, minced
1/2 tsp red pepper flakes (adjust to taste)
1 cup sliced mushrooms
2 cups fresh spinach
2 cups tomato sauce
1/2 cup heavy cream or Greek yogurt
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil, chopped (optional, for garnish)
Instructions
Cook penne pasta according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes; sauté for 1 minute until fragrant.
Add mushrooms and cook for 4–5 minutes until soft.
Stir in spinach and cook until wilted.
Pour in tomato sauce and bring to a simmer. Stir in cream or Greek yogurt and cook for 2–3 minutes until well combined.
Add cooked pasta to the sauce and toss to coat evenly.
Stir in Parmesan cheese and season with salt and pepper to taste.
Serve hot, garnished with fresh basil if desired.
Notes
Greek yogurt can be used for a lighter version instead of heavy cream.
Add grilled chicken or shrimp for extra protein.
Adjust red pepper flakes to make it more or less spicy.
