These delightful Peppermint Snowball Cookies are buttery, crumbly, and infused with festive peppermint flavor. Rolled in powdered sugar, they resemble little snowballs and are perfect for holiday gatherings or as edible gifts.

  • 1 cup (225 g) unsalted butter, softened
  • ½ cup (60 g) powdered sugar (plus extra for rolling)
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • 2 cups (250 g) all-purpose flour
  • ¼ teaspoon salt
  • ½ cup (75 g) finely crushed peppermint candies or candy canes


Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the butter and sugar:
    • In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Add the vanilla and peppermint extracts, and mix until combined.
  3. Mix the dry ingredients:
    • In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms. Stir in the crushed peppermint candies.
  4. Shape the cookies:
    • Scoop about 1 tablespoon of dough and roll it into a ball. Place the balls on the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake:
    • Bake for 10-12 minutes, or until the bottoms are lightly golden. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  6. Roll in powdered sugar:
    • Once the cookies are cool, roll them in powdered sugar until fully coated. For a festive touch, mix some finely crushed peppermint candies into the powdered sugar before rolling.
