Pesto Crusted Salmon is a flavorful and easy dish where fresh salmon fillets are coated with a zesty pesto and breadcrumb mixture, then baked until golden and tender.

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/3 cup basil pesto (store-bought or homemade)
  • 1/2 cup breadcrumbs (panko or regular)
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Season the salmon fillets with salt and pepper and place them skin-side down on the prepared baking sheet.
  3. In a small bowl, mix the breadcrumbs, Parmesan cheese, and olive oil until combined.
  4. Spread about 1 tablespoon of pesto over each fillet, then top with the breadcrumb mixture, pressing lightly to adhere.
  5. Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the crust is golden.
  6. Serve warm with lemon wedges on the side.

  • Panko breadcrumbs give a crispier texture than regular breadcrumbs.
  • Use homemade pesto for a fresher flavor.
