These Pesto Salmon Bites are a fresh and delicious way to enjoy salmon. Bite-sized chunks of salmon are coated in vibrant pesto and cooked until golden and tender. They’re perfect as an appetizer, snack, or served over salad or rice for a light meal!
1 lb (450g) skinless salmon fillet, cut into 1-inch cubes
1/3 cup basil pesto (store-bought or homemade)
1 tablespoon olive oil (for cooking)
Salt and black pepper, to taste
Optional garnish: lemon wedges, grated Parmesan, fresh basil
In a medium bowl, toss the salmon cubes with pesto until evenly coated. Let it marinate for 10–15 minutes if time allows.
Heat olive oil in a nonstick skillet over medium heat.
Add salmon bites in a single layer (work in batches if needed). Cook for 2–3 minutes per side, or until golden and cooked through.
Remove from heat and season lightly with salt and pepper if needed.
Serve warm, garnished with lemon wedges or extra pesto for dipping.
Great served on toothpicks for parties or over pasta or salad for a full meal.
Air fryer method: cook at 400°F (200°C) for 7–8 minutes, flipping halfway.
