This Philly Cheesesteak-inspired pasta combines tender steak, sautéed peppers and onions, cheesy tortellini, and a rich creamy sauce for the ultimate comfort food. A delicious twist on a classic sandwich, all in a one-pan meal!

For the Steak & Vegetables:

  • 1 lb (450g) ribeye steak or sirloin, thinly sliced
  • 1 tbsp olive oil
  • 1 small onion, sliced
  • 1 bell pepper, sliced (green or red)
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp Worcestershire sauce

For the Pasta & Sauce:

  • 12 oz (340g) cheese tortellini (fresh or frozen)
  • 1 tbsp butter
  • 1 cup beef broth
  • 1 cup heavy cream (or half & half)
  • 1 cup shredded provolone or mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (optional, for extra flavor)

For Garnish:

  • Chopped parsley
  • Extra cheese for topping

Instructions

1. Cook the Tortellini

  1. Bring a large pot of salted water to a boil and cook tortellini according to package instructions.
  2. Drain and set aside.

2. Sauté the Steak & Vegetables

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced steak, season with salt, pepper, and Worcestershire sauce, and cook for 2-3 minutes per side until browned. Remove from pan and set aside.
  3. In the same pan, melt butter and sauté onions, peppers, and garlic for 4-5 minutes until softened.

3. Make the Creamy Cheese Sauce

  1. Pour in beef broth and heavy cream, stirring to combine.
  2. Add garlic powder and smoked paprika.
  3. Stir in provolone and Parmesan cheese, mixing until smooth and creamy.

4. Combine Everything

  1. Add cooked tortellini and steak back into the skillet.
  2. Toss everything together, letting it simmer for 2 minutes until well coated.

5. Serve & Enjoy

  • Garnish with chopped parsley and extra cheese.
  • Serve hot with garlic bread or a side salad!


Notes

  • Want a lighter version? Use half & half instead of heavy cream.
  • Swap the steak: Use ground beef or shredded roast beef for an easier version.
  • Make it extra cheesy: Broil the pasta with more shredded cheese for a melty top!
