Pico de Gallo, also known as salsa fresca, is a fresh and zesty Mexican condiment made with ripe tomatoes, onions, cilantro, jalapeños, and lime juice. Perfect as a dip for chips or a topping for tacos, burritos, and grilled meats!

Ingredients

  • 4 medium ripe tomatoes, diced (about 2 cups)
  • ½ small red or white onion, finely diced
  • 12 jalapeños, seeded and finely chopped (adjust for spice level)
  • ¼ cup fresh cilantro, finely chopped
  • Juice of 1 lime (about 2 tbsp)
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper (optional)

Instructions

  1. Combine Ingredients:
    In a medium bowl, mix together the diced tomatoes, onion, jalapeños, and cilantro.
  2. Season:
    Add the lime juice, salt, and black pepper (if using). Stir until well combined.
  3. Taste and Adjust:
    Taste the Pico de Gallo and adjust the lime juice, salt, or spice level to your preference.
  4. Chill (Optional):
    For best flavor, let the Pico de Gallo sit in the refrigerator for 15-30 minutes before serving.
  5. Serve:
    Serve fresh as a dip with tortilla chips or as a topping for your favorite Mexican dishes.

Notes

  • Use the ripest, freshest tomatoes for the best flavor. Roma tomatoes or vine-ripened tomatoes work well.
  • Add a pinch of cumin for a smoky depth of flavor.
  • For extra heat, keep some of the jalapeño seeds or use serrano peppers instead.
