  • Salt and pepper to taste

  • 4 pineapple rings (fresh or canned, drained)

  • 4 slices bacon (cooked until crispy)

  • 1/2 cup shredded mozzarella or cheddar cheese (optional)

  • 1 tbsp olive oil (if cooking on stovetop or grill)

Instructions

Oven Method:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.

  2. Season chicken with garlic powder, paprika, salt, and pepper.

  3. Place chicken in the baking dish. Brush generously with BBQ sauce.

  4. Top each chicken breast with a pineapple ring, a slice of cooked bacon, and shredded cheese if using.

  5. Bake for 20–25 minutes or until chicken is cooked through (internal temp 165°F).

Grill Method:

  1. Preheat grill to medium heat. Oil the grates.

  2. Season and grill chicken for 6–7 minutes per side, basting with BBQ sauce as it cooks.

  3. Add pineapple slices to the grill for 1–2 minutes per side until charred.

  4. Top chicken with bacon, pineapple, and cheese (if using). Cover grill until cheese melts.
