Pineapple Casserole is a quirky but delicious Southern side dish made with canned pineapple, sharp cheddar cheese, and a buttery Ritz cracker topping. It’s sweet, savory, and a little tangy—perfect for holiday dinners, potlucks, or alongside baked ham.

  • 1 (20 oz) can pineapple chunks, drained (reserve 1/4 cup juice)

  • 1 (20 oz) can crushed pineapple, drained

  • 3/4 cup granulated sugar

  • 3 tablespoons all-purpose flour

  • 1 1/2 cups shredded sharp cheddar cheese

  • 1 sleeve Ritz crackers (about 30), crushed

  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8 or 9×9-inch baking dish.

  2. Mix the filling:
    In a large bowl, combine sugar, flour, and reserved pineapple juice. Stir until smooth.
    Add drained pineapple chunks, crushed pineapple, and shredded cheddar cheese. Mix until well combined.

  3. Assemble:
    Pour the pineapple mixture into the prepared baking dish and spread evenly.

  4. Add the topping:
    In a small bowl, mix crushed Ritz crackers with melted butter until evenly coated.
    Sprinkle the cracker mixture evenly over the top of the pineapple mixture.

  5. Bake:
    Bake for 25–30 minutes, or until the top is golden brown and bubbly.

  6. Cool slightly & serve:
    Let it sit for a few minutes before serving. It can be served warm or at room temperature.

Notes

  • Sharp cheddar gives the best contrast to the sweetness—don’t be afraid of the combo!

  • Make it ahead: assemble, refrigerate, then bake when ready to serve.

  • Goes especially well with ham or roasted chicken.
