This tropical pineapple coconut smoothie is creamy, refreshing, and packed with island flavors. Made with simple ingredients, it’s a perfect breakfast, snack, or post-workout treat.

Ingredients

  • 1 1/2 cups frozen pineapple chunks
  • 1 cup coconut milk (canned or carton)
  • 1/2 cup plain or vanilla Greek yogurt (or coconut yogurt for a dairy-free option)
  • 1 tbsp honey or maple syrup (optional, for added sweetness)
  • 1/4 tsp vanilla extract (optional)
  • Ice cubes (optional, for extra thickness)
  • Shredded coconut (optional, for garnish)


Instructions

  1. Blend Ingredients:
    • In a blender, combine the frozen pineapple, coconut milk, Greek yogurt, honey, and vanilla extract (if using). Blend on high until smooth and creamy.
  2. Adjust Consistency:
    • If the smoothie is too thick, add a splash of coconut milk or water. For a thicker consistency, add a few ice cubes and blend again.
  3. Serve:
    • Pour into a glass and top with shredded coconut or a pineapple wedge for garnish. Serve immediately.

Notes

  • For added protein, blend in a scoop of vanilla or coconut-flavored protein powder.
