1 cup coconut milk (canned or carton)
1/2 cup plain or vanilla Greek yogurt (or coconut yogurt for a dairy-free option)
1 tbsp honey or maple syrup (optional, for added sweetness)
1/4 tsp vanilla extract (optional)
Ice cubes (optional, for extra thickness)
Shredded coconut (optional, for garnish)
Instructions
Blend Ingredients:
In a blender, combine the frozen pineapple, coconut milk, Greek yogurt, honey, and vanilla extract (if using). Blend on high until smooth and creamy.
Adjust Consistency:
If the smoothie is too thick, add a splash of coconut milk or water. For a thicker consistency, add a few ice cubes and blend again.
Serve:
Pour into a glass and top with shredded coconut or a pineapple wedge for garnish. Serve immediately.
Notes
For added protein, blend in a scoop of vanilla or coconut-flavored protein powder.
To make this smoothie even more tropical, add 1/2 a banana or a splash of orange juice.
